Gordon Ramsay's Spicy Sausage Rice (Veganized)

A few tweaks to the legendary chef Ramsay's Spicy Sausage Rice recipe and you have yourself a delicious, spicy, vegan meal in under 40 minutes.

  • 1 tablespoon extra virgin olive oil (or your preferred oil)
  • 1 medium red onion (about 1 cup) diced
  • 1 large red bell pepper (about 1 cup) diced
  • 3 - 4 cloves garlic minced
  • 4 sausages Beyond Meat hot Italian casings removed
  • 1 teaspoon paprika
  • 1 cup white rice (I like jasmine or basmati, use what you prefer)
  • 2 cups vegetable broth
  • 1 bay leaf
  • 2 large tomatoes (roma, heirloom - whatever you prefer) diced
  • 1/4 cup green onion chopped
  • 1/4 cup parsley roughly chopped


  • Heat a large pot over medium high heat and add oil once hot.
  • Add red onion to oil and cook for 3 to 4 minutes until fragrant & translucent.
  • Add the red pepper and cook an additional 3 minutes. Follow up with garlic and cook another minute until the garlic is fragrant.
  • Crumble the Beyond Meat sausages (casings removed) into the pot and cook on medium high heat for 6 to 8 minutes until the sausage starts to brown. Depending on your stovetop the sausage may cook quicker so keep an eye on it.
  • Add paprika to the veggies & sausage, give it a mix and cook an additional minute.
  • Add rice to the pot and let it toast up for 30 seconds before adding the vegetable broth. Bring the rice to a simmer and then reduce the heat to low. Add the bay leaf and cook for 20 minutes covered.
  • Remove from heat, add your fresh tomatoes, green onion, parsley & serve!
