Vegan Toasted BLT

Who doesn’t love an easy to slap together BLT? This Vegan Toasted BLT is my go to when I want a delicious lunch with minimal effort. Not only is it tasty it’s got some good for you ingredients like tomato, avocado, lettuce & tempeh.

If you have never tried tempeh, don’t be scared off – it’s absolutely amazing! It’s earthy and has a meaty texture. Made up of soybeans that have been fermented with grains! It’s also nutritious, providing your body with protein, fiber and iron! It’s very easy to cook – fry it up in a pan or even pop it in the air fryer to crisp it up a bit! My favorite go to tempeh is Tofurky’s Smoky Maple Bacon. It’s the best in sandwiches! You can also marinate your own tempeh to flavor it to your liking!

  • 2 leaves romaine lettuce
  • 1 roma tomato thinly sliced
  • 1 small avocado thinly sliced
  • 6 strips smoky maple tempeh bacon (my favorite is Tofurky Smoky Maple Bacon)
  • 1 tablespoon extra virgin olive oil
  • 4 slices rye bread (or your favorite sandwich bread)
  • 4 tablespoons vegan mayo
  • 1/2 tablespoon sriracha
  • 2 slices your favorite vegan cheese (I used Parmela Sharp Cheddar)


  • Prep the veggies – Clean & your lettuce, thinly slice your tomatoes & avocado
  • Cook the tempeh bacon – Place in an air fryer at 350° for 5 – 6 minutes until browned and crispy OR heat a large pan over medium high heat and cook in oil for 2 minutes per side until nicely browned.
  • Toast the bread – You can either toast your bread in the toaster to save on dishes & time OR heat up a large pan over medium heat and once hot add oil and toast your bread for 4 – 6 minutes in the pan, flipping halfway so both sides get nice and toasty!
  • Make sriracha mayo – Combine mayo and sriracha and mix well.
  • Put the sandwich together – Spread the sriracha mayo on your toast and follow up with your avocado, tempeh bacon, tomato slices, lettuce & vegan cheese. Press down on the sandwich (not with Hulk force or you'll be eating a smashed sandwich!!) to cut it in half without losing half the ingredients.


  • You can add or subtract veggies based on your preference!
